CHRISTMAS CANAPÉ: SAVOURY TARTS

A sensible party host will find clever ways to limit the amount of preparation he or she has to do leading to their event. With supermarkets selling so many convenience foods, we are really forced into the situation of having to prepare complex components of dishes but instead can buy them from the shops.

We find that getting a batch of savoury tart cases can save you hours of time of making dough and shaping the tiny cases. You can do the fun part – getting creative with fillings! And if you have ingredients left over your party, they can go into these cases (or larger ones, actually) and you have a nice and easy lunch for work next day.

Here we’ve loaded the cases with the most simple of fillings – for the vegetarian, we spooned a little Urbangrains Pumpkin Chutney into the case, added finely diced roast vegetables, and crumbled feta cheese. This went into the oven about 15 minutes before we were ready to serve. The feta had softened nicely and our guests enjoyed it!

For the meat lovers, we decided to serve the tarts cold. The only additional step we took was to brush the inside of the cases with melted butter. We allowed them to cool, and then they were ready for filling. The reason we do this is to ensure that the tart case doesn’t go soggy. After all, being served cold, we were able to prepare these far ahead of time, giving us the chance to concentrate on our mains. We spooned some Beetroot Chutney into the bottom, while we topped it with shredded peppery roast beef. And it was ready to go.
