You know when you really need to get a lot of work done at the weekend, you feel conflicted because you partly want to enjoy yourself but you remember your priorities. It’s on those days that we are sometimes tempted to eat unhealthy food, get a rich takeaway or sometimes eat nothing at all. All unhealthy options!
We’ve found that the best thing to do is simply do a one-pot meal cooked in the oven. Something that takes a few minutes to put together and needs very little attending to. The aim is to not lose your rhythm of work but at the same time to get some great nourishment.
So we practically invented this recipe with chicken, rosemary and cherry tomatoes that’s a delicious summer meal, served alongside a crisp fresh salad and a lovely glass of white wine. And what did we eat finally?
Chicken (jointed – we used drumsticks and thighs)
Urbangrains Olive Oil
Red Onion – 1
Cherry tomatoes on the vine, if possible
Rosemary – several sprigs
Salt
Pepper Prepare an oven by pre-heating it to 180*C. Make sure you have your baking tray to hand. Lightly drizzle olive oil and coat the surface lightly. Prepare the chicken. Lay the pieces at the bottom of the dish. Slice the onion, but not too finely. Scatter all around the tray. Pick one or two sprigs of rosemary and tuck them away amidst chicken pieces. Add seasoning to your taste (we advise going easy on the pepper).
Make sure that all the ingredients are coated thoroughly with the olive oil. It’s now ready to go into the oven. About 25 minutes into the process, lay the cherry tomatoes on the vine on the tray, distributing them evenly all around. We do this so that the tomatoes, which require little cooking don’t disintegrate completely, but they add a little bit of their juiciness to the dish when their skins split from the heat. The dish takes about 40-50 minutes to cook thoroughly.
Make sure you’re extra careful with cooking chicken – make sure that when you insert a knife into the fleshy parts of the joints, the juices run clear and not pink. Now while that’s happening, you can take a break from work and put together your lovely salad. Bon appetit!
